Friday I bought two huge eggplants. What did I decide to do with them? Leave it to me to make the most complicated dish I could imagine. A couple months back I had been introduced to Sultan's Delight in Boston with my Turkish friend Selin!

 

After a couple of HOURS, yes hours, it was finally done. We ate it out on the deck in Jamestown, RI overlooking the bay during sunset. The view was fabulous and so was the dish!!! I was so surprised how wonderful it came out.
